Minestrone Hamburg Soup Recipe
- 1 pound hamburg or possibly grnd turkey
- 1 c. onion, minced
- 1 c. raw potato, cubed
- 1 c. sliced raw carrot
- 1/2 c. celery, diced
- 1 c. zucchini, diced
- 1/2 c. shredded cabbage
- 1/2 c. frzn peas
- 1 (#2) can tomatoes
- 1/4 c. rice or possibly barley, uncooked
- 1 sm. bay leaf
- 1/2 teaspoon thyme
- 1/4 teaspoon basil
- Salt to taste
- 1/2 teaspoon pepper
- 1 1/2 quart. water
- 2 bouillon cubes
- Grated cheddar cheese
- Brown beef with onion.
- Add in potatoes, carrots, cabbage, celery, zucchini, peas and tomatoes.
- Bring to boil.
- Add in rice or possibly barley, seasonings, water and bouillon cubes.
- Cover and simmer 1 hour.
- To serve, sprinkle with cheese.
