Warm Chickpea, Tomato & Cucumber Salad
- 1/4 cup Kraft Calorie-Wise Zesty Italian Dressing, divided
- 1 small red onion, thinly sliced
- 3 cloves garlic, minced
- 1 can (14 fl oz/398 mL) no-salt-added chickpeas (garbanzo beans), rinsed
- 1 tsp. ground cumin
- 1 cup chopped English cucumbers
- 1 cup grape tomatoes, cut in half
- 1/4 cup Cracker Barrel Shredded Part Skim Mozzarella Cheese
- 1 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- Heat 2 Tbsp.
- dressing in large nonstick skillet on medium heat.
- Add onions and garlic; cook and stir 3 min.
- or until onions are crisp-tender.
- Stir in chickpeas and cumin; cook 3 min.
- or until heated through, stirring occasionally.
- Remove from heat.
- Add remaining dressing with all other remaining ingredients; mix well.
