Rich and Exquisite! Onigiri with Seasoned Soft-Boiled Eggs

  1. Make the seasoned soft-boiled egg (Steps 2 through 4):
  2. Bring water to a boil in a pan.
  3. Take out a cold egg from the fridge.
  4. Pierce the bottom of the egg with a thumb tack or something similar.
  5. Place carefully into the pan and boil for 7 minutes.
  6. Chill in water to peel (the shells will slide off).
  7. Put into a plastic bag.
  8. Add shio-koji, mentsuyu, or any sauce of your choice and leave to marinate (overnight, if possible).
  9. Make the onigiri (remaining steps):
  10. Line a rice bowl with plastic wrap.
  11. Spread out a thin layer of rice.
  12. Place the seasoned egg on top.
  13. Wrap everything in plastic wrap and shape.
  14. Because it's so soft and easily falls apart, wrap a sheet of nori seaweed around the onigiri to finish.
