Potato, Onion and Asparagus Frittata

  1. Heat oven to 350 degrees F.
  2. Heat dressing in large ovenproof skillet on medium heat.
  3. Add potatoes and onions; cook and stir 5 min.
  4. or until potatoes just begin to brown.
  5. Add asparagus and pepper; cook 5 to 7 min.
  6. or until asparagus is crisp-tender, stirring occasionally.
  7. Whisk eggs in medium bowl; stir in mozzarella and half the Parmesan.
  8. Pour over vegetables.
  9. Bake 20 to 25 min.
  10. or until knife inserted in centre comes out clean.
  11. Sprinkle with remaining Parmesan.
