Enchiladas
- 1 lb. ground beef or chuck
- 1 pkg. taco seasoning
- 1 small can mushroom pieces
- 1 small can green chilies
- 1/2 c. olives, chopped
- 1 small onion, chopped
- 1 small green pepper, chopped
- black olives
- 1 1/2 c. cheese
- 1 to 3 cans tomato sauce
- 8 to 10 tortilla shells (soft)
- Prepare meat and taco seasoning as directed on package.
- If using onion, brown in small amount of oil, then add ground beef. Brown and drain.
- Add 1/2 cup cheese (chunks or shredded) and can of tomato soup, plus other chosen ingredients.
- Simmer until cheese is melted and all ingredients are heated.
- Grease cookie sheet or sheet cake pan.
- Put desired amount of meat mixture in shell.
- Roll and place in pan.
- Place open end of shell on pan bottom to prevent unrolling.
- Pour 2 cans of tomato sauce over top; sprinkle with shredded cheese.
- Put in oven at 350u0b0 until cheese is melted.
