Clean Chocolate Chunk Cookies
- 12 cup organic whole wheat flour
- 12 cup organic unbleached flour
- 14 teaspoon baking soda
- 14 teaspoon sea salt
- 8 tablespoons coconut oil or 8 tablespoons organic butter, softened
- 23 cup sucanat or 23 cup demerara sugar
- 13 cup organic sugar
- 1 organic egg
- 1 organic egg yolk
- 1 teaspoon organic pure vanilla extract
- 1 cup semisweet chocolate, chopped
- Preheat oven to 325 degrees.
- 1.
- In a large bowl beat coconut oil or butter for a minute.
- 2.
- Add sucanat or demerara and beat until combined and fluffy .
- 3.
- Add eggs and vanilla.
- 4.
- In a medium bowl combine flour, salt, and soda.
- 5.
- Add dry to wet in 2 batches combining with mixer.
- 6.
- Fold in chopped chocolate.
- 7.
- Drop cookie dough on cookie sheet and slightly roll with hands into flattened balls.
- I do 6 to a sheet.
- 8.
- Bake for 14-17 minutes.
- 9.
- Chill bowl of dough in refrigerator in between batches.
- This dough is better cooled.
- 10.
- Let cool on sheet for a couple minutes then transfer to wire reack or paper towels to finish cooling.
