Red Caviar Dip
- 1 cup sour cream
- 2 whole scallions, thinly sliced
- 1 tbsp. fresh lemon juice
- 1 tbsp. fresh chives, chopped
- 1 tsp. fresh chives, chopped (for garnish)
- 1/4 cup red salmon caviar, drained and rinsed
- 3 tbsp. red salmon caviar (for garnish)
- Mix sour cream, scallions, lemon juice and 1 tbsp.
- chives in a medium bowl.
- Gently fold in 1/4 cup caviar.
- Tranfer to a serving bowl.
- Cover and refrigerate for at least 6 hours (or up 1 day).
- Sprinkle dip with remaining 1 tsp.
- chives and 3 tbsp.
- caviar.
- Serve with toast points, good crackers or raw vegetables.
