Quick and Easy Chinese Chicken

  1. Add the soy sauce, sherry, cornstarch, and sugar in a mixing bowl; add in 1/4 cup water and whisk until the cornstarch is dissolved.
  2. Add in chicken tenders; toss to coat and set bowl aside.
  3. Add oil to a skillet and let heat over medium heat.
  4. Add in green onion, ginger, and garlic; stir/saute for 2 minutes or until vegetables are soft.
  5. Drain the marinade from chicken; reserve marinade.
  6. Add chicken to the skillet and cook for 1 minute on each side.
  7. Pour marinade over the chicken; lower heat to medium-low and stir for about 6-7 minutes or until chicken is cooked and the sauce is thickened.
  8. Serve over hot cooked rice.
