Pegasus
- 15 mint leaves
- 1/2 ounce Simple Syrup
- 1 1/2 ounces sake
- 1 ounce bourbon
- 1/2 ounce lychee nectar
- 1/4 ounce fresh lime juice
- Crushed ice
- 1 ounce chilled club soda
- 1 lychee
- In a pint glass, muddle 14 of the mint leaves with the Simple Syrup.
- Add the sake, bourbon, lychee nectar and lime juice.
- Stir well and strain into a highball glass filled with crushed ice.
- Top with the club soda and garnish with the lychee and the remaining mint leaf.
