Roasted-Garlic Mashed Potatoes
- 5 lb. Yukon gold potatoes
- 1 stick unsalted butter
- 1 c. heavy cream
- 2 tbsp. Mashed Roasted Garlic
- 2 tsp. Tabasco
- salt
- freshly ground white pepper
- 1 tbsp. flat-leaf parsley
- In a large pot, cover potatoes with water and bring to a boil.
- Simmer over moderate heat, uncovered, until tender, 20 minutes.
- Drain potatoes and return to pot.
- Cook over low heat, gently tossing, until potatoes are dry, 2 minutes.
- Add butter, cream, and roasted garlic to potatoes and mash over low heat until creamy and heated through.
- Add Tabasco and season with salt and pepper.
- Transfer mashed potatoes to a bowl, garnish with parsley and serve.
