Roasted-Garlic Mashed Potatoes

  1. In a large pot, cover potatoes with water and bring to a boil.
  2. Simmer over moderate heat, uncovered, until tender, 20 minutes.
  3. Drain potatoes and return to pot.
  4. Cook over low heat, gently tossing, until potatoes are dry, 2 minutes.
  5. Add butter, cream, and roasted garlic to potatoes and mash over low heat until creamy and heated through.
  6. Add Tabasco and season with salt and pepper.
  7. Transfer mashed potatoes to a bowl, garnish with parsley and serve.
