Avocado and Watercress Salad with Soy Dresssing

  1. To make the dressing:
  2. In a bowl, whisk together all the dressing ingredients until well blended.
  3. Season with more soy sauce, vinegar or red pepper flakes to reach desired taste.
  4. To make the salad:
  5. In a large bowl, toss together avocado, red onion, apples, celery and cilantro until well combined.
  6. Pour 3/4 of the dressing into the bowl, and toss until well coated.
  7. In another bowl, toss the watercress gently with remaining dressing until well coated.
  8. To plate:
  9. Divide the watercress among 4 serving plates.
  10. Place the avocado mixture on top of the watercress evenly on each plate.
  11. Serve with some crusty bread if needed.
