Avocado and Watercress Salad with Soy Dresssing
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce, tamari
- 1 tablespoon sesame oil
- 2 tablespoons olive oil, extra-virgin
- 1 clove garlic minced
- 1/2 teaspoon ginger freshly minced
- red pepper flakes to taste
- 1 each avocados ripe, peeled and cut into small chunks
- 1 small red onion finely diced
- 1 small apples gala or red delicious, diced into small chunks
- 1 each celery stalks thinly sliced
- 1/4 cup cilantro freshly chopped
- 1 bunch watercress 8 cups, well washed and tough stems removed
- crusty bread optional
- To make the dressing:
- In a bowl, whisk together all the dressing ingredients until well blended.
- Season with more soy sauce, vinegar or red pepper flakes to reach desired taste.
- To make the salad:
- In a large bowl, toss together avocado, red onion, apples, celery and cilantro until well combined.
- Pour 3/4 of the dressing into the bowl, and toss until well coated.
- In another bowl, toss the watercress gently with remaining dressing until well coated.
- To plate:
- Divide the watercress among 4 serving plates.
- Place the avocado mixture on top of the watercress evenly on each plate.
- Serve with some crusty bread if needed.
