Honey-Pineapple Chicken Sandwich

  1. Mix mustard, juice and onions until well blended.
  2. Pour evenly over chicken in 2 full-size hotel pans (or 1 half-size hotel pan for trial recipe).
  3. Bake at 350F for 20 to 30 minutes or until chicken is cooked through (170F).
  4. Remove from oven.
  5. Place chicken and sauce in separate pans; keep warm.
  6. For each serving: Fill roll with 1/4 cup of the spinach leaves and 1 chicken breast; drizzle with 1-1/2 Tbsp.
  7. of the mustard sauce.
  8. Serve immediately.
