Yummy Carrot Soup
- 1 onion
- 1 tablespoon oil
- 1 lb carrot (Chopped)
- 5 cups vegetable stock
- 34 cup red lentil (rinsed)
- 1 teaspoon coriander
- Soften onion in oil.
- Add chopped carrots and let soften for 5-10 minutes on medium heat.
- Add vegetable stock, lentils, and coriander and bring to a boil.
- Simmer for 20-30 minutes.
- Blend with a hand blender or food processor until smooth.
- Eat and enjoy!
