Caramelized Onion and Bacon Mashed Potatoes with Meatloaf
- 1/4 cup Kraft Extra Virgin Olive Oil Aged Balsamic Vinaigrette Dressing
- 3 onions, thinly sliced
- 1 lb. (450 g) extra-lean ground beef
- 1/2 cup dry bread crumbs
- 1/4 cup chopped fresh parsley
- 1 egg, beaten
- 4 slices bacon, cooked, crumbled and divided
- 1/2 cup Philadelphia Jalapeno Cream Cheese Product, divided
- 1 lb. (450 g) Yukon gold potatoes (about 4), quartered
- Heat dressing in large skillet on medium-low heat.
- Add onions; cook 15 min.
- or until golden brown, stirring occasionally.
- Cool 15 min.
- Heat oven to 375 degrees F. Mix meat, bread crumbs, parsley, egg, half the bacon, 3 Tbsp.
- cream cheese product and 1/2 cup onions just until blended.
- Shape into loaf in 9x5-inch loaf pan sprayed with cooking spray.
- Bake 40 to 45 min.
- or until done (165 degrees F).
- Meanwhile, cook potatoes in boiling water in large saucepan 15 to 20 min.
- or until potatoes are tender.
- Drain potatoes; return to pan.
- Add remaining cream cheese; mash potatoes to desired consistency.
- Stir in remaining bacon and onions.
- Let meatloaf stand 5 min.
- before removing from pan and slicing to serve with the potatoes.
