Caramelized Onion and Bacon Mashed Potatoes with Meatloaf

  1. Heat dressing in large skillet on medium-low heat.
  2. Add onions; cook 15 min.
  3. or until golden brown, stirring occasionally.
  4. Cool 15 min.
  5. Heat oven to 375 degrees F. Mix meat, bread crumbs, parsley, egg, half the bacon, 3 Tbsp.
  6. cream cheese product and 1/2 cup onions just until blended.
  7. Shape into loaf in 9x5-inch loaf pan sprayed with cooking spray.
  8. Bake 40 to 45 min.
  9. or until done (165 degrees F).
  10. Meanwhile, cook potatoes in boiling water in large saucepan 15 to 20 min.
  11. or until potatoes are tender.
  12. Drain potatoes; return to pan.
  13. Add remaining cream cheese; mash potatoes to desired consistency.
  14. Stir in remaining bacon and onions.
  15. Let meatloaf stand 5 min.
  16. before removing from pan and slicing to serve with the potatoes.
