Southern Frittata

  1. Place potatoes in a saucepan, cover with water and simmer for 10 minutes or until done.
  2. Drain and set aside.
  3. In a nonstick skillet coated with cooking spray over medium heat.
  4. Add onions and cook for 20 minutes or until golden brown, stirring frequently.
  5. Remove from heat and set aside.
  6. In a small skillet coated with cooking spray over medium heat.
  7. Add ham and cook till hot .
  8. Combine potatoes, onions and ham in a mixing bowl with 1/4 tsp (1 ml).
  9. of salt.
  10. Preheat broiler.
  11. Combine 1/4 tsp (1 ml).
  12. salt, paprika, black pepper, egg whites, eggs or eggbeaters and garlic mixing well with a whisk.
  13. Add potatoes, onions and ham to a baking dish.
  14. Pour over egg mixture and sprinkle with cheese.
  15. Cook over medium heat for 2 minutes or until eggs mixture is slightly set.
  16. Move baking dish to broiler for 3 minutes or until egg mixture is set and cheese is melted.
  17. Gently slide your creation onto a platter and cut into 8 pieces.
  18. Yield; 4 servings.
