Lemon garlic zucchini pasta
- 2 medium zucchini or summer squash
- 2 tbsp olive oil
- 2 clove garlic, minced
- 1/2 tsp red pepper flakes
- 1 lemon - juice only
- 1/4 tsp salt
- 1 dash pepper
- 1 parmesan cheese, for serving
- Heat olive oil, garlic, and red pepper flakes in saute pan over medium heat
- Meanwhile, cut zucchini into thin ribbons with vegetable peeler or strips with spiral cutter.
- Add zucchini and lemon juice.
- Cook 3 minutes, until just heated through.
- Season with salt, pepper, parmesan, and serve.
