Salmon and Potato Mille-Feuille Pastries

  1. Slice the salmon thinly on the diagonal into bite sized pieces and sprinkle with sake.
  2. Cut the potato into half or quarters and slice 2 to 3 mm thick.
  3. Season both with salt and pepper.
  4. Pre-heat the oven to 200C.
  5. Butter the muffin molds, and line each with 2 to 3 slices of salmon.
  6. Layer in several slices of potato, and spread a teaspoon of mayonnaise in each mold.
  7. Distribute the rest of the salmon evenly between the molds, and do the same with the potato slices.
  8. Spread the tops with more mayonnaise.
  9. Sprinkle the tops with cheese.
  10. Bake in a 200 C oven for 25 minutes.
  11. Done.
  12. Let cool and take out of the molds.
  13. Arrange on serving plates, and decorate with some parsley if you have some.
