Sloppy Black Bean Joes
- 1 teaspoon Olive Oil
- 1/2 cups White Onion, Chopped
- 1/2 cups Green Pepper, Chopped
- 15 ounces, fluid Diced Tomatoes, Canned
- 1/2 cups Barbecue Sauce
- 1/4 cups Ketchup
- 1 Tablespoon Honey
- 1 Tablespoon Apple Cider Vinegar
- 1 Tablespoon Yellow Mustard
- 3 cups Black Beans, Cooked (or Canned And Rinsed)
- 4 whole Whole Wheat English Muffins
- In a large skillet, heat olive oil over medium high heat.
- Add onions and saute until they begin to soften.
- Add green peppers and heat for additional 3-4 minutes.
- Stir in diced tomatoes, barbecue sauce, ketchup, honey, vinegar and mustard.
- Reduce heat to medium low and heat until sauce has reduced slightly and is thickened, about 8-10 minutes.
- Fold in black beans and heat through, about 5 minutes.
- Toast English muffins and spoon sloppy joe mixture over the top.
- Serve open-faced or as a sandwich with lettuce and tomato.
