Sloppy Black Bean Joes

  1. In a large skillet, heat olive oil over medium high heat.
  2. Add onions and saute until they begin to soften.
  3. Add green peppers and heat for additional 3-4 minutes.
  4. Stir in diced tomatoes, barbecue sauce, ketchup, honey, vinegar and mustard.
  5. Reduce heat to medium low and heat until sauce has reduced slightly and is thickened, about 8-10 minutes.
  6. Fold in black beans and heat through, about 5 minutes.
  7. Toast English muffins and spoon sloppy joe mixture over the top.
  8. Serve open-faced or as a sandwich with lettuce and tomato.
  9. Nutrition info per 1 cup mixture on 1 English muffin: 418 calories, 3 g fat, 18 g protein, 66 g carbohydrates, 17 g fiber!
