Elyce's Sweet, Creamy Mashed Potatoes W/A Kick
- 3 lbs potatoes
- 13 cup Splenda granular
- 1 tablespoon brown sugar
- 2 tablespoons black pepper
- 1 cup half-and-half cream
- 2 tablespoons jalapeno juice
- 13 cup pickled jalapeno pepper
- 13 cup red pepper
- 13 cup yellow pepper
- 1 tablespoon chili powder
- 3 tablespoons margarine
- 1 teaspoon salt
- 12 cup cheddar cheese, shredded
- Chop red and yellow peppers and pickled jalapenos finely or food process.
- Wash and Peel Potatoes.
- Put in Large pot of water and boil until potatoes are soft.
- Drain potatoes.
- Return to pot.
- Use potato masher to smash potatoes until there are no visible lumps.
- Add: 2 Tblsp.
- butter, 1/2 cup half and half, jalapeno juice, pepper, Splenda, brown sugar, jalapenos, red and yellow peppers, salt, and chili powder, to pot.
- Beat with mixer for 1and1/2 minutes (or until perfectly creamy and smooth).
- Return to stove top.
- At a medium to low heat and add the other 1/2 cup of half and half and the last Tblsp of margarine.
- Mix for 30 seconds.
- Top with cheese and cover for 3 minutes.
- Enjoy.
