Microwave Potato Soup With Cheese Recipe
- 2 c. finely minced potatoes, about 2 med.
- 1 c. minced onion, (about 1)
- 1/2 c. warm water
- 2 teaspoon instant chicken bouillon
- 8 ounce. process cheese spread loaf, cut up
- 1 c. warm water
- 1/4 c. imitation bacon

- Place potatoes, onion, 1/2 c. warm water and the chicken bouillon in 2 qt casserole.
- Cover tightly and microwave on high (100%) 3 min; stir.
- Cover and microwave till potatoes are tender, 3 to 5 min longer.

- Place potato mix in blender container; add in cheese and 1 c. warm water.
- Cover and blend on high speed till uniform consistency, about 45 seconds.
- Pour soup into casserole dish.
- Cover tightly and microwave on high (100%) till warm, 1 to 2 min.
- Stir in small amount of warm water for thinner consistency if you like.
- Sprinkle each serving with 1 Tbsp.
- imitation bacon.
- Garnish with snipped parsley if you like.
