Microwave Potato Soup With Cheese Recipe

  2. Place potatoes, onion, 1/2 c. warm water and the chicken bouillon in 2 qt casserole.
  3. Cover tightly and microwave on high (100%) 3 min; stir.
  4. Cover and microwave till potatoes are tender, 3 to 5 min longer.

  6. Place potato mix in blender container; add in cheese and 1 c. warm water.
  7. Cover and blend on high speed till uniform consistency, about 45 seconds.
  8. Pour soup into casserole dish.
  9. Cover tightly and microwave on high (100%) till warm, 1 to 2 min.
  10. Stir in small amount of warm water for thinner consistency if you like.
  11. Sprinkle each serving with 1 Tbsp.
  12. imitation bacon.
  13. Garnish with snipped parsley if you like.
