Aunt Belle's Raisin Sugar Cookies Recipe
- 3 c. of raisins (one box)
- 2 c. solid shortening
- 3 c. sugar + extra sugar for rolling
- 6 x Large eggs
- 6 c. flour
- 2 tsp baking soda
- 2 tsp vanilla
- 1 tsp salt
- Crushed nuts, walnuts or possibly pecans as much as you desire
- Grease a cookie sheet or possibly 2.
- This makes a whopping bunch of cookies!
- Boil raisins in two c. of water till water is gone and set aside to cold.
- I tried golden brown raisins and really liked them.
- Cream shortening and sugar and then add in the Large eggs -one at a time.
- Dissolve the 2 tsp.
- of soda into the 2 tsp.
- of vanilla.
- Add in flour about a c. at a time, the soda and vanilla mix and 1 tsp.
- of salt.
- Add in raisins and nuts.
- Shape (with your hands and a tsp.)
- cookie mix into balls about the size of walnuts and roll in sugar.
- Bake at 375 till lightly brown.
- My oven takes about 10 to 12 min to bake these cookies till they are a nice brown color.
- Makes gobs ofcookies so I usually cut this recipe in half.
