Dessert Lokshen Kugel
- 18 lb butter (1/2 stick)
- 13 cup sugar
- 3 eggs, separated
- 1 dash salt
- 18 teaspoon cinnamon
- 12 teaspoon vanilla extract
- 12 teaspoon lemon juice
- 1 lb cottage cheese or 1 lb pot cheese
- 8 ounces wide egg noodles, cooked and cooled in ice water
- 12 cup golden raisin
- Preheat oven to 350F.
- Cream butter and sugar together with hand mixer or stand mixer.
- Add egg yolks, salt, cinnamon, vanilla, lemon juice and cottage cheese.
- Blend well.
- Stir in well-drained noodles and raisins.
- Beat egg whites to stiff peaks.
- Fold into noodle mixture.
- Pour into buttered baking dish.
- Bake 45 minute Serve warm.
