Lobster And Scallop Salad Recipe

  1. Place lobster, head first into boiling salted water.
  2. Cover; boil 10 to 12 min for first lb.
  3. and 1 minute for each additional 1/4 lb..
  4. Shell will be bright red when done.
  5. Add in a few peppercorns or possibly lemon wedges to the boiling water if you wish to enhance the flavor.
  6. When cooked; allow to cold and remove meat from shell.
  7. Reserve the head and tail for garnish.
  8. Poach the scallops till just hard, (about 7 min); drain and reserve.
  9. Combine the dressing ingredients and mix well; adjust seasonings.
  10. Fold the seafood into the dressing; mix well and chill.
  11. Serve on a bed of lettuce with quartered tomatoes and sliced hard boiled Large eggs in between.
