Apricot-Orange Glazed Carrots
- 8 medium carrots, sliced
- 12 cup dried apricot, sliced
- 12 cup orange juice
- 1 tablespoon butter
- 1 12 teaspoons brown sugar
- 12 teaspoon salt
- 14 teaspoon grated orange peel
- 18 teaspoon ground ginger
- Place 1" water in a large saucepan; add carrots.
- Bring to a boil; reduce heat, cover & simmer for 9-11 min until crisp-tender.
- Drain & set aside.
- In the same pan, combine the remaining ingredients; cook & stir until slightly thickened.
- Return carrots to the pan; stir until glazed & heated through.
