Curried Lima Bean Soup Recipe
- 1 (10 ounce.) pkg. frzn baby lima beans
- 2 tbsp. butter
- 1/2 c. sliced green onion
- 1 teaspoon curry pwdr
- 1/2 teaspoon salt
- 1/8 teaspoon white pepper
- 1/2 teaspoon dry tarragon
- 4 sprigs parsley
- 1/2 c. heavy cream
- 1 (13 ounce.) can chicken broth
- Minced chives
- NOTE: I prefer to use leeks instead of green onion, plus I use more parsley, plus 1/4 tsp.
- more curry.
- Cook beans with 2 Tbsp.
- butter, 1/3 c. sliced green onions (tops too) and curry pwdr till beans are soft, 20-30 min.
- Empty beans and liquid into blender; add in salt, pepper, tarragon, parsley and 1/2 c. cream.
- Cover and blend on low speed.
- Then blend on high for 20 seconds or possibly till smooth.
- Pour into saucepan and add in chicken broth.
- Heat over simmering water or possibly microwave 3 min.
- Garnish with minced chives.
- Serves 6.
