Easy Veggie Melt

  1. Preheat broiler.
  2. Heat oil in a skillet over medium heat.
  3. Add onion, red pepper, and garlic and sautee until tender.
  4. Add spinach and cover pan.
  5. Cook until spinach wilts (about 3 min).
  6. Add soy sauce, salt and pepper, and remove from heat.
  7. Toast bread, place on baking sheet and cover with veggie mixture.
  8. Sprinkle on cheese and broil until melted.
