White Bean Chile
- 1 large chicken breast, skinless and boneless, cut into small pieces (approx. bite size)
- 12 cup red hot sauce (or any other brand hot sauce)
- 1 tablespoon lemon pepper
- 32 ounces prepared northern white beans
- 1 quart tomatoes, whole or crushed
- 1 -2 cup cheddar cheese
- 1 large yellow onion, chopped
- 1 green pepper, seeded and chopped
- 4 tablespoons lime juice
- 2 teaspoons cumin
- 2 teaspoons red pepper flakes, more or less depending on how hot you like it
- Place chicken in small bowl.
- Mix hot sauce and lemon pepper and pour over chicken, making sure to coat all pieces.
- Marinate at least 2 hours Mix the rest of the ingredients in a large pot or crock pot and set at low heat.
- Stir fry the chicken in a wok or skillet on high heat until the center of the chicken is no longer pink.
- Stir the chicken into the chile.
- Simmer on low at least 2 hrs, stirring occasionally.
- If using a crock pot, prepare the chile in the morning and cook on low all day.Can also prepare in a large covered casserole dish in the oven and bake it at 350 degrees for 1 hour.
