Chicken Caprese and Bacon for Two
- 4 slices bacon
- 12 ounces chicken breasts
- 2 teaspoons olive oil
- 1/4 teaspoon salt
- 18 teaspoon black pepper
- 1 each italian plum (roma) tomatoes
- 4 large basil leaves, thinly sliced
- 2 ounces mozzarella cheese sliced
- It is possible to make this recipe in either an full-sized oven or even single serving in a toaster oven.
- Set oven to 400F (200C).
- Lay the bacon slices onto a small baking pan and bake at 400F (200C) in the oven or toaster oven until partially cooked but still quite pliable.
- Remove to paper toweling to drain.
- Coat chicken breasts with the olive oil, season with the salt and black pepper and place on a rimmed baking sheet.
- Top each chicken breast with tomato slices and the basil then wrap the bundle up with 2 slices of bacon for each breast forming a cross or X.
- Bake at 400 degrees F, uncovered for 20 to 25 minutes until cooked through.
- For the juiciest results use an instant-read thermometer and bake until the thickest part of the chicken reads 165 degrees F.
- Top with shredded or sliced mozzarella cheese and return to the oven to melt the cheese, about 1 minute.
- Serve.
