Easy Skillet Frittata

  1. Heat oil in large nonstick skillet on medium-high heat.
  2. Add potatoes and green pepper; cook 5 minutes or until potatoes are browned, stirring occasionally.
  3. Beat eggs and milk with wire whisk until foamy; pour evenly over potato mixture.
  4. Sprinkle with bacon; cover.
  5. Reduce heat to low.
  6. Cook 8 to 11 minutes or until eggs are set.
  7. Sprinkle with cheese.
  8. Cover.
  9. Cook 3 to 4 minutes or until cheese is melted.
  10. Cut into wedges to serve.
  11. Garnish with chopped tomatoes, if desired.
