Empanada Pie

  1. Preheat oven according to pie crust directions.
  2. Chop onion and garlic and place in large pot.
  3. Cook about 5 minutes on medium heat and add ground beef.
  4. Brown meat and drain excess grease.
  5. Place mixture back in pot and add can of tomatoes, salt, and red pepper flakes to taste.
  6. Cook over medium heat about 5 minutes.
  7. Place 1 pie crust in pie plate.
  8. Pour mixture in the crust and spread the cheese over the top (dont be shy).
  9. Place 2nd pie crust over the top and cut 3-4 small slits to vent.
  10. Put pie in oven and bake according to pie crust directions (usually about 20-25 minutes).
  11. Remove from oven and let cool for about 15 minutes before serving.
  12. Goes great with Spanish or Mexican rice.
