Black Eyed Pea Salad (Gc) Recipe
- 2 lb Cooked black-eyed peas
- 2 x Scallions cut into 1/2" pcs
- 1 x Red bell pepper seeded, finely diced
- 1/2 x Green bell pepper seeded, finely diced
- 1 Tbsp. Chopped garlic
- 1/4 c. Minced cilantro
- 1/2 c. Extra virgin olive oil
- 3 Tbsp. Red wine vinegar
- 1 Tbsp. Whole grain mustard to 2 tbsps
- 1 x Fresh jalapeno chopped Salt to taste Freshly grnd black pepper to taste
- In a large bowl, combine the peas, scallions, bell peppers, garlic and cilantro.
- Set aside.
- In a small bowl, whisk together the remaining ingredients.
- Pour over the salad mix and combine well.
- Serve.
