Ricotta Pesto Parmesan Pasta

  1. In a large pot of boiling water add salt and pasta.
  2. Stir and cook about 10-12 minutes until pasta is tender but not mushy in texture.
  3. In a large skillet, over medium heat, add oil.
  4. Once oil is hot, add shallots and garlic.
  5. Saute for 2 minutes.
  6. Add pesto in and just stir.
  7. Now stir in ricotta and stir until creamy.
  8. Add a pinch of salt now if you like.
  9. Add parmesan cheese and stir.
  10. Take 1/4 cup of pasta water and add to sauce.
  11. Add cooked pasta and stir to coat pasta.
  12. Serve hot and enjoy.
  13. Top with some toasted pine nuts.
  14. Or extra cheese.
  15. A great side dish is a salad or steamed broccoli or broccolini.
