Sausage, Sweet Potato & Kale Soup
- 6-1/2 oz. (1/2 of 13-oz. pkg.) OSCAR MAYER Selects Uncured Smoked Turkey Sausage
- 1/2 lb. sweet potatoes (1 medium), peeled, cut into 1/2-inch cubes
- 1 can (14.5 oz.) Italian-style diced tomatoes, undrained
- 1 can (14.5 oz.) fat-free reduced-sodium chicken broth
- 2 cups chopped stemmed kale
- 1 can (15 oz.) cannellini beans, rinsed
- Cut sausage lengthwise in half, then slice crosswise.
- Cook in large saucepan on medium-high heat 5 min.
- or until lightly browned, stirring occasionally.
- Add potatoes, tomatoes and broth; stir.
- Bring to boil; cover.
- Simmer on medium-low heat 10 min.
- or until potatoes are tender.
- Stir in kale and beans; cook 3 min.
- or until heated through, stirring frequently.
