Versatile Buttery Peaches

  1. Preheat oven to 350.
  2. Peel, halve and seed the peaches.
  3. In a 1-quart saucepan over medium-high heat, heat the sugar, lemon juice, butter and water to boiling.
  4. Simmer 5 minutes.
  5. Place peaches in a casserole dish and pour syrup over peaches.
  6. Cover and bake 30 minutes or until the peaches are tender.
  7. Place a little of the mint jelly in the center of each half, if you like.
  8. Drain and serve.
