Brown Rice Salad Recipe

  1. Dressing:Put all ingredients in a screw topped jar and shake well to blend before using.
  2. Cook the rice in boiling salted water for 30-40 min till tender.
  3. Rinse and drain well.
  4. Chop the spring onions and capsicum fine.
  5. Transfer the rice to a bowl while still hot and add in the spring onions and remaining ingredients.
  6. Toss thoroughly and transfer to a serving dish.
  7. Serves 6-8.
