Brown Rice Salad Recipe
- 1 c. rice, brown
- 6 x spring onions
- 1/2 c. corn kernels
- 1 x red capsicum
- 1/3 c. currants
- 60 gm cashew nuts, roasted
- 2 Tbsp. sunflower seeds
- 1/4 c. vegetable oil
- 1 tsp sesame oil
- 1 Tbsp. soy sauce
- 1 Tbsp. lemon juice
- 1 tsp garlic, crushed
- 1 tsp ginger, crushed
- 1/2 tsp honey
- 1/10 tsp chilli paste salt, pepper
- Dressing:Put all ingredients in a screw topped jar and shake well to blend before using.
- Cook the rice in boiling salted water for 30-40 min till tender.
- Rinse and drain well.
- Chop the spring onions and capsicum fine.
- Transfer the rice to a bowl while still hot and add in the spring onions and remaining ingredients.
- Toss thoroughly and transfer to a serving dish.
- Serves 6-8.
