Black Olive And Feta Cheese Muffins Recipe

  1. Preheat oven to 400 F, grease the pans.
  2. Thoroughly combine the wet mix ingredients in a bowl.
  3. Stir in the dry mix till all the ingredients are well combined.
  4. Place the mix in the pans & sprinkle with combined topping ingredients.
  5. Bake for 25-30 mins.
  6. Makes 12.
  7. These muffins are aperfect accompaniment to Caesar or possibly Greek salads & soups.
  8. Try them with grilled fish & salad.
  9. Variations:1.
  10. BOF & Sundried Tomato - Add in 1/4 c. minced sundried tomatoes to the wet mix.
  11. 2.
  12. BOF & Rosemary - Add in 2 Tbsp finely minced rosemary to the wet mix.
  13. Omit the thyme.
  14. Hint: Remove muffins from the pans soon after cooking so they do not sweat.
  15. Don't use muffin papers.
