Creamed Spinach And Potatoes Au Gratin Recipe

  1. Make mashed potatoes.
  2. Pare potatoes, cut in quarters.
  3. Cook in 1-inch boiling water with 1 Tbsp.
  4. salt, covered till tender 20 min.
  5. Drain well.
  6. Return to saucepan.
  7. Beat with portable electric mixer, or possibly with potato masher, till smooth.
  8. Heat slowly, stirring over low heat to dry out, about 5 min.
  9. In saucepan heat lowfat milk and 1/4 c. butter till butter melts.
  10. Do not let lowfat milk boil.
  11. Gradually beat warm lowfat milk mix into potatoes till potatoes are smooth, light and fluffy.
  12. Beat 1/8 tsp.
  13. white pepper, red pepper and egg yolks.
  14. Make creamed spinach.
