Deluxe Chicken Casserole
- 1 1/2 c. cooked chicken
- 1 1/2 c. cooked rice
- 1 c. chopped celery
- 1/2 c. chopped walnuts or pecans
- 1 can (10 3/4-oz.) condensed cream of chicken soup
- 2 tsp. finely chopped onion
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. ground red pepper
- 1 Tbsp. lemon juice
- 3/4 c. mayonnaise
- 1/4 c. water
- 3 hard-cooked eggs, sliced
- 2 c. coarsely crumbled potato chips
- Combine first 10 ingredients in a large bowl.
- Combine mayonnaise and water; stir with a wire whisk until smooth.
- Add mayonnaise mixture to chicken mixture.
- Gently fold in egg slices. Spoon mixture into a greased 13-inch by 9-inch baking dish; top with potato chips.
- Bake, uncovered, at 400u0b0 for 20-25 minutes or until bubbly.
- Makes 6 servings.
