Southern Sweet 'tater Muffins
- 1 34 cups all-purpose flour
- 1 teaspoon baking soda
- 12 teaspoon ground cinnamon
- 14 teaspoon salt
- 2 eggs
- 1 cup sugar
- 12 cup brown sugar, firmly packed
- 12 cup vegetable oil
- 1 (17 ounce) can sweet potatoes, drained & mashed
- 12 cup pecans, chopped
- 1 cup dates, chopped
- 14 cup all-purpose flour
- Preheat oven to 350 degrees.
- Sift first four ingredients in a bowl.
- Combine eggs and next four ingredients in another bowl and mix well.
- Mix sweet potato mixture and dry ingredients together.
- Dust pecans and dates with the 1/4 cup flour then add to muffin mixture.
- (This keeps them from falling to the bottom of the muffin).
- Grease muffin tins or line with cupcake/muffin liners.
- Bake for 27-30 minutes.
