Italian Peas
- 2 tablespoons olive oil
- 1 small red onion, sliced
- 15 cherry tomatoes, halved
- 3 garlic cloves, diced
- 1 small green chili, sliced
- 1 teaspoon all purpose seasoning
- 12 teaspoon fresh ground black pepper
- 1 12 cups frozen peas
- 12 teaspoon cayenne pepper
- 2 tablespoons tomato puree
- 1 tablespoon capers
- 10 black olives
- 10 green olives
- 1 tablespoon fresh basil leaf, roughly torn
- Heat the olive oil in a pan.
- Add the cherry tomatoes, onions, garlic, chilli, all purpose seasoning and black pepper.
- Stir frequently so it doesn't catch, cook until the onions are soft and the cherry tomatoes are falling apart.
- Add the frozen peas and cayenne pepper, continue stirring frequently, cook until the peas are defrosted and nearly cooked.
- Add the tomato puree, capers, and green and black olives.
- Continue stirring frequently, cook until the peas are completely cooked and the all the ingredients are hot.
- Stir in the basil leaves and serve :-).
