Pan-Fried Salmon with Butter

  1. Season the salmon with salt and pepper.
  2. Slice the garlic thinly.
  3. Heat the oil in a frying pan and cook the garlic over low-medium heat until fragrant.
  4. Take the garlic out of the pan.
  5. Wipe off any surface moisture from the salmon, and dust lightly with flour.
  6. Cook from the side you want to have on top first.
  7. When it's browned turn the salmon over and cook the other side slowly also.
  8. When the fish is cooked through, wipe out any excess oil in the pan, add the butter and cook to a crispy finish.
  9. Swirl in the soy sauce, coat the salmon with it and it's done.
  10. Serve with lemon slices.
