Black Forest Pancakes Recipe
- 1 c. all-purpose flour
- 1 1/2 tsp baking pwdr
- 1/2 tsp baking soda
- 3 Tbsp. sugar
- 2 Tbsp. unsweetened cocoa
- 1/4 tsp salt
- 1 c. lowfat 1% lowfat milk -- chocolate flavored
- 1 x egg -- lightly beaten
- 1 1/2 Tbsp. margarine -- melted Cherry Sauce
- Combine first 6 ingredients; make a well in center of mix.
- Combine chocolate lowfat milk, egg, and margarine; add in to dry ingredients, stirring just till dry ingredients are moistened.
- For each pancake, pour 2 Tbsp.
- batter onto a warm griddle or possibly skillet coated with cooking spray.
- Turn pancakes when tops are covered with bubbles and edges look cooked.
- Top with cherry sauce.
- Yield: 16servings.
- Cherry Sauce2 Tbsp.
- sugar2 tsp.
- cornstarch1/4 c. water1/4 tsp.
- lemon juice8 ounces frzn unsweetened cherries, thawed
- Combine sugar, cornstarch, and water in a saucepan, stirring till smooth.
- Add in lemon juice and cherries; stir well.
- Cook over medium heat, stirring constantly, till thickened and bubbly.
- Yield: 1 c..
