Sausage And Minestrone Soup
- 1/2 lb. bulk Italian sausage
- 1 c. chopped onion
- 2 cloves garlic, chopped
- 8 c. water
- 1 (28 oz.) can tomatoes, undrained and broken up
- 5 tsp. beef bouillon cubes or packets
- 4 tsp. Italian seasoning
- 1/4 tsp. pepper
- 2 medium carrots, pared and sliced
- 1 (15 oz.) can garbanzo beans or kidney beans, drained
- 1 (9 oz.) pkg. frozen cut green beans, thawed
- 8 oz. spaghetti, broken, or any desired pasta, cooked
- grated Parmesan cheese
- In large pot, brown sausage, onion and garlic.
- Pour off fat. Add remaining ingredients, except beans, spaghetti and cheese. Bring to boil; reduce heat and simmer, uncovered, for 1 hour. Stir in beans and pasta.
- Bring back to a boil; reduce heat and simmer for 10 minutes, until beans are tender.
- Serve with Parmesan cheese.
