Chicken Chow Mein
- 1 small chicken (approximately 1 lb.)
- 3 c. celery, diced
- 1 c. diced onions
- 6 oz. mushrooms (whole or sliced)
- 1 lb. can bean sprouts
- 5 oz. can water chestnuts
- 10 oz. chicken broth
- 1/4 c. soy sauce
- 1/4 c. cold water
- 1 1/2 c. rice
- 3 Tbsp. cornstarch
- 2 Tbsp. vegetable oil
- Chinese noodles
- Cook chicken until tender, then tear in small strips or pieces.
- Combine celery and onions in saucepan and cook on low heat until tender.
- Add
- to
- this mixture mushrooms (drained), bean sprouts (drained),
- water chestnuts (drained) and cooking oil.
- Simmer.
- Separately
- mix
- soy
- sauce,
- chicken
- broth, cornstarch and water.
- Blend
- with
- celery
- and onion mixture, when it is thoroughly done.
- Continue simmering.
- Add chicken. Serve over rinsed,
- drained,
- cooked
- rice.
- Top
- with Chinese noodles.
