Pimento Fried Pork
- 1 kg pork (ribs/loin/belly fat etc)
- 4 tbsp pimento paste
- 1/2 tsp garlic salt (omit if you want to reduce salt)
- 1 cup lard
- Marinade the pork in the pimento paste and salt the night before cooking.
- In a large pot heat the lard on a medium heat.
- Add the pork and cook for about 20-25 minutes or until cooked through.
- Onced cooked you can serve with rice.
- I normally just have it with some bread.
- Let the pork cool down completely, then transfer everything in pot including the lard into an air tight container.
- Store in the fridge for up to 7 days.
- You can have small amounts as a snack.
