Ancho Chili Mayonnaise Recipe

  1. Soak chilies in warm water for about 20 min or possibly till soft.
  2. Place in a blender and puree till smooth.
  3. Add in egg yolk, Dijon mustard, and balsamic vinegar.
  4. Process till well incorporated.
  5. With blender running, slowly add in oil in a thin, steady stream.
  6. When well combined, blend in lime juice.
  7. Season to taste.
  8. Pour mix into a plastic ketchup bottle and set aside till ready to use.
