Spinach Sausage Cheese Pie
- 1 lb. Italian sausage, chopped
- 6 eggs
- 2 (10 oz.) pkg. spinach, chopped, thawed and drained
- 1 (16 oz.) pkg. Mozzarella cheese, shredded
- 2/3 c. Ricotta
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. garlic powder
- pastry for 2 pie crusts
- 1 broiler fryer chicken, cut in serving pieces
- 2 Tbsp. oil
- 1 c. sliced onion
- 1 (8 oz.) can button mushrooms
- 1 green pepper, seeded and sliced
- 1 1/2 tsp. oregano
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. wine vinegar (red)
- Place chicken pieces in large, shallow baking pan, skin side up.
- (Use a pan about 15 x 10 x 2-inch.)
- Brush with corn oil. Bake, uncovered, in a 450u0b0 oven for 20 minutes.
