Homemade Pork Rind

  1. Pre-heat the oven to 325f/160c/gas mark 3.
  2. Cut the skin into small pieces.
  3. Toss the skin in the salt.
  4. Place the pork pieces on a baking tray lined with parchment paper or foil.
  5. Put the skin in the oven for anywhere between 1.5 hours to 3 hours.
  6. A lot of recipes call for 3 hours I find that sometimes after 2 hours its ready for me.
  7. So use your own judgement on this one.
  8. Timing will vary depending on how thick the cuts are.
  9. You want it to be crispy but not rock hard.
  10. Remove it from the oven when ready.
  11. Let it cool to room temperature and enjoy.
  12. Note: that you will have to remove the build up of liquid fat from the baking tray
