Apple Harvest Chicken Recipe

  1. Cook pasta in plenty of boiling water till done but still hard to the bite (al dente).
  2. While pasta is cooking, heat oil in a large nonstick skillet over medium heat.
  3. Add in chicken cubes and till opaque on all sides, 3-5 min.
  4. Add in mushrooms and saute/fry for 2-3 min more.
  5. Add in onion, apples, apple juice, and basil.
  6. Cover, bring to a boil, reduce heat, and simmer till apples are tender (about 10 min).
  7. Gently stir in lowfat sour cream and hot through.
  8. Season to taste with salt and pepper.
  9. Place fettuccine on a platter and spoon chicken mix over the top.
  10. Sprinkle with paprika and serve.
