Chicken & Rice (Spanish) Recipe
- 1 pound boneless chicken breast, cut into strips
- 1 1/2 teaspoon oil
- 1 1/2 c. water
- 1 (8 ounce.) can tomato sauce
- 1 pkg. taco seasoning mix
- 1 c. corn, liquid removed
- 1 med. red pepper
- 1 1/2 c. Minute Rice (or possibly long grain rice)
- 1/4 c. shredded Cheddar cheese
- Cook and stir chicken in warm oil.
- Lightly brown.
- Add in water and tomato sauce.
- Cook and simmer 5 min.
- Add in corn and pepper and taco seasoning.
- Stir in rice.
- Let stand 5 min.
- Fluff with fork.
- Add in cheese.
- Serves 4 to 6.
- Serve with a salad.
